After closing Ocean Room, Raita Noda has risen to a new challenge. Along with his son Momotaro, Chef Noda has opened a private restaurant with a difference – Raita Noda Chef ’s Kitchen accommodates only eight guests at the counter seats. Chef Noda works in the small kitchen, serving a degustationonly menu, and is happy to talk about his dishes and show his skills. The restaurant is suitable for a couple or a small group of people celebrating a special occasion.
This restaurant may be small, but it is a full of surprises. Diners have a ringside seat as Chef Noda prepares and serves his ten-course omakase (degustation), which changes daily. Dishes may include a sashimi combination of tuna, snapper and hiramasa. For this dish, diners can watch as smoked kinmedai (red bream) is instantly smoked using a smoking kit and then covered with a glass lid that is removed just before eating. Roasted wagyu rump cap with salt and pepper, served with wasabi and lime, is delicious in its simplicity.
