The seasonal menu presents Italian classics with an Australian spin. The beautifully presented carpaccio of hiramasa kingfish with pickled cucumber, caperberries, watercress and red pepper gel is a delicious way to start your meal. The twice-cooked Berkshire pork belly with its stunning crackling is another perfect appetiser. For main course, the 300-day aged Black Angus beef tenderloin is super tender and served with buttery marrow bones, truffle–marsala sauce with well-prepared and executed accompaniments of crisp potato galette and pickled beetroot.
