With his popular inner-city restaurant, verde restaurant + bar, well established, Antonio Ruggerino has now turned his attention to another challenge – introducing his take on Italian cuisine to the beaches – Freshwater to be precise. As part of the Harbord Diggers complex, which sits at the top of a hill, Gio’s rooftop location offers panoramic ocean views across Freshwater and Manly. Regardless of the weather, you can sit comfortably and soak up the serenity and the breathtaking vista. For now, Chef Ruggerino is dipping his foot in the local waters to get a feel for what Northern Beaches customers want, and to his credit, he has nailed it.
Simple, delicious, classic dishes are what you will find here. For the veal cottaletta, the chefs coat the veal in their special crumb, and then fry it till golden brown. The meat is kept tender during this process. The dish is finished off with slices of mouth-watering, melted provolone and a vibrant, tasty tomato sauce.
PSST! Keep an eye out for the new Brazilian Head Pastry Chef, she is sure to wow the customers with her creations.
